Prep Time15 minutes
Cook Time15 minutes
Total Time30 minutes
Ingredients
1 Tbsp olive oil
1 lb. Italian sausage, casings removed
3 cloves garlic, minced
1 onion, diced
2 tsp. Italian seasoning
salt and pepper, to taste
2 Tbsp. all purpose flour
4 cups chicken broth
1 (8 oz.) can tomato sauce
9 oz. cheese tortellini
½ bunch of kale, stems removed and leaves chopped
⅓ cup heavy cream
3 Tbsp. chopped basil
Instructions
Heat the olive oil in a dutch oven over medium heat. Add in the sausage and cook and crumble it into small pieces. When the sausage has fully cooked, drain the excess fat from the pan.
Mix in the garlic, onion, and italian seasoning. Cook until the onions turn translucent then season with salt and pepper to taste.
Whisk in the flour and cook until it turns a light golden brown. Slowly whisk in the chicken stock and tomato sauce. Bring the sauce to a boil then reduce the heat to low so that it is simmering. Simmer, while stirring occasionally, for 10 minutes or until it has thickened.
Add in the tortellini and cook for about 5-7 minutes until tender. Then add in the kale and mix until it wilts. Mix in the heavy cream and chopped basil. Cook for about 1 minute. Taste and adjust the seasoning if necessary. Enjoy!
