Black Bean Pumpkin Chili

Ingredients

2 tablespoons extra virgin olive oil
1 pound ground turkey, or 1½ cups cubed cooked turkey
1 medium onion, chopped
1 medium yellow bell pepper, chopped
3 garlic cloves, minced
2 (15 ounce) cans black beans, rinsed and drained
1 (14.5 ounce) can solid-pack pumpkin
1 (14.5 ounce) can diced tomatoes
1 (14.5 ounce) can petite diced tomatoes with lime juice & cilantro
3 cups chicken broth
2 teaspoons chili powder
1 1/2 teaspoons each cumin and oregano
Salt and black pepper to taste

Directions

  • IN A SKILLET, HEAT OIL OVER MEDIUM HEAT. ADD TURKEY, ONION, PEPPER AND GARLIC; COOK AND STIR UNTIL TENDER. DRAIN WELL.
  • TRANSFER TO SLOW COOKER. ADD REMAINING INGREDIENTS AND STIR TO COMBINE. COOK, COVERED ON LOW FOR 4 TO 5 HOURS.
  • OPTION: TOP WITH CUBED AVOCADO AND THINLY SLICED GREEN ONIONS

Ingredients

1 lb. ground turkey breast

1 medium onion, chopped

2 cloves garlic, minced

1 can (14.5oz.) petite cut diced tomatoes, not drained

1 cup cooked lentils

1 tsp. cumin

1/4 to 1/2 tsp. chipotle chili powder

12 taco-size corn tortillas or taco shells
Optional Toppings:

  • SOUR CREAM
  • SHREDDED ROMAINE LETTUCE
  • SHREDDED CHEDDAR CHEESE
  • CHOPPED AVOCADO
  • THINLY SLICED RADISHES

 

Directions
  1. COOK TURKEY, ONION AND GARLIC IN A LARGE SKILLET OVER MEDIUM HEAT UNTIL MEAT IS BROWN AND ONION IS TENDER; DRAIN.
  2. STIR IN TOMATOES, LENTILS, CUMIN AND CHILI POWDER. COOK 5 MINUTES, STIRRING OCCASIONALLY.
  3. SERVE TURKEY MIXTURE IN TORTILLAS WITH DESIRED TOPPINGS.

NOTE: To substitute 3 cups chopped cooked turkey for ground turkey breast, stir in with tomatoes in Step 2.

1 pound ground turkey
1 (14.5 ounce) can Red Gold® Diced Tomatoes with Basil, Garlic & Oregano, drained very well
1 egg, beaten
1/4 cup bread crumbs
Salt and black pepper to taste

Directions

  • COMBINE GROUND TURKEY, DICED TOMATOES, EGG AND BREAD CRUMBS IN A BOWL. FORM INTO PATTIES AND SEASON WITH SALT AND BLACK PEPPER.
  • PLACE ON GRILL AND COOK TO DESIRED TEMPERATURE, 160O FOR COMPLETELY COOKED BURGERS
  • OPTION: FOR ADDED FLAVOR PUT ¼ CUP GRATED PARMESAN CHEESE INTO THE CENTER OF EACH PATTY

Suggested Accompaniments:

  • SERVE ON TOASTED ITALIAN BREAD
  • TOP WITH A THICK PASTA SAUCE (HEATED)
  • SPRINKLE WITH SHREDDED ITALIAN BLEND CHEESE OR 1 SLICE OF FRESH MOZZARELLA CHEESE.

  • • 1 JAR OR CAN (14 OR 15 OUNCES) MARINARA SAUCE
  • • SALT AND PEPPER, TO TASTE
  • • ¼ CUP CHOPPED PARSLEY
  • • ¼ CUP GRATED PARMESAN CHEESE
  • • 4 (10 OUNCES EACH) POTATOES
  • • 12 OUNCES GROUND TURKEY
  • • 1 MEDIUM ONION, CHOPPED
  • • 1 MEDIUM GREEN BELL PEPPER, CHOPPED
  • • 1 CUP SLICED MUSHROOMS
 
Instructions
  1. PIERCE POTATOES WITH TINES OF FORK; MICROWAVE ON HIGH 20 TO 22 MINUTES UNTIL POTATOES ARE FORK-TENDER.
  2. MEANWHILE, IN LARGE NONSTICK SKILLET OVER MEDIUM HEAT SAUTÉ TURKEY UNTIL NO LONGER PINK, ABOUT 6 MINUTES. ADD ONION, BELL PEPPER AND MUSHROOMS; SAUTÉ, STIRRING, 3 MINUTES. STIR IN MARINARA SAUCE; BRING TO BOIL, REDUCE HEAT, COVER AND SIMMER 10 MINUTES. SEASON WITH SALT AND PEPPER; STIR IN PARSLEY.
  3. PLACE POTATOES ON 4 PLATES; SPLIT AND FLUFF. TOP POTATOES WITH TURKEY MIXTURE AND CHEESE, DIVIDING EQUALLY.
