Even though it’s natural to start off the New Year thinking about all of the goals you want to set, don’t get too caught up in extreme health trends. Instead, we encourage you to focus on a well-rounded, sustainable, and healthful diet, as this makes a significant difference when it comes to preventing chronic diseases (such as heart disease, type 2 diabetes, and certain types of cancer). Everyone is different, so find a strategy that feels right for you. This month, we’re sharing some tasty and nutritious recipes (featuring canned and jarred tomatoes, of course) that will fuel your body and soul for the upcoming year. If you’re like me, you’re always on the lookout for fresh, new ways to use familiar foods, especially vegetables. Tomatoes are a perfect example of a versatile vegetable that can be added to dishes that may not immediately come to mind. Think of tomatoes, and the first foods you think of are likely to be stand-by dishes, like spaghetti, pizza, and tomato soup. While these are loved and time-honored dishes, maybe it’s time to expand your tomato repertoire. There are so many more ways to incorporate tomato products and their health benefits (antioxidants, vitamins A and C, potassium and folic acid) into your diet. Think desserts, jams, and ethnic dishes from Croatia and cultural favorites like Cajun sauces. Canned tomato sauces, tomato pastes, chopped, crushed or pureed, whole peeled, or fire-roasted tomatoes are available year round, are nutritious and add that certain something to new dishes. And most canned tomato products offer the option of already being seasoned with basil, oregano, garlic or onion. You can also opt for organic, if you choose. Here are a few new dishes for you to try on for size the next time you’re up for trying something different with trusty tomato products as part of the mix.

Tomato Soup Cake—this seemingly oddball, but delicious pairing of the rich tomato flavor and traditional cake ingredients is sure to become a family favorite. It’s ideal for holidays or any day you’re in the mood for something sweetly different. This quick, one-skillet meal is perfect for a lazy Saturday morning breakfast, or a wholesome dinner any night of the week.

Serves 6

Ingredients:

  • 6 EGGS
  • 2 TABLESPOONS MILK
  • ½ TEASPOON DRIED BASIL
  • ¼ TEASPOON BLACK PEPPER
  • ¼ CUP FETA CHEESE, CRUMBLED
  • 1 TABLESPOON EXTRA VIRGIN OLIVE OIL
  • 1 CUP ASPARAGUS, SLICED INTO ½-INCH SLICES ON THE DIAGONAL
  • 2 CLOVES GARLIC, MINCED
  • ½ POUND BABY RED POTATOES, DICED INTO ½-INCH CUBES AND BOILED UNTIL FIRM BUT TENDER
  • 1 OUNCE PROSCIUTTO, CHOPPED
  • 1 14.5-OUNCE CAN DICED TOMATOES, DRAINED
  • ¼ CUP PARMESAN CHEESE, FINELY GRATED
  • ⅓ CUP PREPARED TOMATO SALSA

Instructions:

  1. PREHEAT OVEN TO 375 F.
  2. BEAT EGGS, MILK, BASIL, AND PEPPER UNTIL SMOOTH. MIX IN FETA CHEESE. SET ASIDE.
  3. HEAT OLIVE OIL IN A 10-12 INCH OVEN-PROOF SKILLET OVER MEDIUM HEAT.
  4. ADD THE ASPARAGUS AND SAUTÉ UNTIL CRISP-TENDER, ADD GARLIC AND SAUTÉ ANOTHER MINUTE. ADD POTATOES AND PROSCIUTTO, AND SAUTÉ TWO MORE MINUTES.
  5. POUR TOMATOES OVER TOP AND ARRANGE INGREDIENTS EVENLY IN SKILLET.
  6. POUR THE EGG MIXTURE OVER SKILLET MIXTURE AND COOK (WITHOUT STIRRING) FOR 2-3 MINUTES.
  7. PLACE SKILLET IN THE OVEN AND BAKE FOR ABOUT 10 MINUTES.
  8. WHEN THE CENTER IS BEGINNING TO FIRM, TOP WITH PARMESAN CHEESE AND INCREASE OVEN TEMPERATURE TO BROIL.
  9. BROIL FOR 1-2 MINUTES, WATCHING CLOSELY FOR IDEAL BROWNING, AND REMOVE.
  10. LET SIT 2 MINUTES, SLICE INTO WEDGES, AND SERVE WITH ONE TABLESPOON OF SALSA ON TOP.
  11. NUTRITION INFORMATION PER SERVING: 190 CALORIES, 12 G PROTEIN, 12 G CARBOHYDRATES, 11 G FAT, 4 G SATURATED FAT, 518 MG SODIUM, 2 G DIETARY FIBER.

Recipe from Pacific Coast Producers. Wings are a crowd-pleasing snack. They’re rich, messy, and fun to eat. In this play on buffalo wings, the chicken gets baked until it’s crispy, then tossed with a homemade sweet-and-sour tomato-ginger chutney that perfectly complements the meat. Baked Chicken Wings
Ingredients
  • FOR THE WINGS
  • 2½ POUNDS CHICKEN WINGS
  • 1 TABLESPOON OIL
  • SALT
  • 2 TABLESPOONS CHOPPED CILANTRO LEAVES
  • FOR THE CHUTNEY:
  • 1 TABLESPOON OIL
  • 2 LARGE ONIONS, DICED
  • 2 GARLIC CLOVES, MINCED
  • 1 TABLESPOON MINCED FRESH GINGER
  • 1 28-OUNCE CAN ITALIAN DICED TOMATOES IN JUICE
  • 1 TABLESPOON KOSHER SALT
  • 1 TABLESPOON SUGAR
  • 1 TEASPOON CUMIN
  • 1 TEASPOON CURRY POWDER
  • PINCH CAYENNE
  • 2½ TABLESPOONS APPLE CIDER VINEGAR
 
Instructions
  1. PREHEAT THE OVEN TO 400°F. PLACE THE WINGS IN A BOWL AND TOSS THEM WITH THE OIL AND SEVERAL BIG PINCHES OF SALT. ARRANGE THE WINGS ON TWO BAKING SHEETS LINED WITH PARCHMENT PAPER OR FOIL. YOU DON’T WANT THEM TO TOUCH. BAKE THE WINGS FOR 15 MINUTES, THEN INCREASE THE OVEN TEMPERATURE TO 425°F AND BAKE FOR 15 MORE MINUTES. THE SKIN SHOULD BE BROWN AND CRISP.
  2. MEANWHILE, HEAT A DUTCH OVEN OR LARGE SAUCEPAN OVER MEDIUM HEAT. SAUTÉ THE ONIONS UNTIL TRANSLUCENT AND SOFT, ABOUT 8-10 MINUTES, STIRRING FREQUENTLY. ADD THE GARLIC AND THE GINGER AND COOK FOR AN ADDITIONAL 3 MINUTES. CAREFULLY POUR IN THE TOMATOES, THEN ADD THE SALT, SUGAR, SPICES, AND 2 TABLESPOONS OF THE VINEGAR. BRING TO A BOIL, THEN REDUCE THE HEAT TO LOW AND LET THE CHUTNEY SIMMER FOR 15 MINUTES, STIRRING OCCASIONALLY. ADD THE REMAINING VINEGAR.
  3. LET THE CHUTNEY COOL TIL A SPLATTER WOULDN’T BURN YOU (ABOUT 15 MINUTES), THEN PURÉE IN A FOOD PROCESSOR OR USING AN IMMERSION BLENDER UNTIL SMOOTH. PLACE ABOUT THREE QUARTERS OF THE CHUTNEY IN A SERVING PLATTER WITH SIDES. USING TONGS, TRANSFER THE WINGS INTO THE SAUCE. TOSS ALL TOGETHER TO COAT THE CHICKEN WITH THE CHUTNEY. GARNISH WITH CILANTRO. SERVE HOT OR AT ROOM TEMPERATURE.
  4. YOU’LL HAVE SOME EXTRA SAUCE—YOU CAN PUT IT OUT WITH THE CHICKEN OR SAVE IT FOR ANOTHER USE.

This a tasty and great new idea on bean dip from Pacific Coast Producers and Liz’s Cooking Blog
Ingredients
  • 1 CAN BLACK BEANS
  • 1 CAN WHITE BEANS
  • 1 CUP FROZEN CORN KERNELS
  • 7 OZ. HOT SALSA
  • 2 CUPS SHREDDED CO-JACK CHEESE
  • 1 CUP CHOPPED TOMATOES
  • GARLIC SALT TO TASTE
  • CILANTRO TO GARNISH
 
Instructions
  1. PREHEAT THE OVEN TO 350°.
  2. RINSE AND DRAIN BOTH CANS OF BEANS.
  3. SQUEEZE THE LIQUID OUT OF TOMATOES BEFORE CHOPPING SO THE DIP DOESN’T TURN RUNNY. PUT ALL INGREDIENTS EXCEPT CILANTRO IN A BOWL AND MIX TOGETHER.
  4. GREASE A SHALLOW BAKING DISH BEFORE SPOONING IN THE BEAN MIXTURE.
  5. SPRINKLE A LITTLE CHEESE ON TOP.
  6. BAKE FOR 20 MINUTES UNTIL THE CHEESE IS MELTED AND THE DIP IS HEATED THROUGH. REMOVE FROM THE OVEN AND TOP WITH CILANTRO.
